The topic of my dissertation is: „Probiotic sheep's milk ice cream with collagen and vitamin C”.
Despite growing interest in the use of collagen hydrolysates and vitamin C in functional foods, their combined effects on the quality of frozen dairy products, vitamin C stability, and the survival of probiotic bacteria during storage and simulated gastrointestinal digestion remain insufficiently understood.
Previous studies have shown that both technological stress, including freezing, and physiological factors, such as low gastric pH, digestive enzymes, and bile salts, can significantly reduce the number of viable probiotic bacterial cells, thereby limiting the potential health benefits of these products.
To overcome these limitations, increasing attention has been given to modifying the food matrix by incorporating ingredients with potential protective properties. One promising approach involves the use of collagen hydrolysates, which, due to their physicochemical properties, may influence product structure and the survival of probiotic microorganisms. Vitamin C plays an essential role in collagen biosynthesis by acting as a cofactor for enzymes responsible for the hydroxylation of proline and lysine residues. Therefore, combining collagen hydrolysates with vitamin C represents an interesting approach to the development of functional foods.
Despite the growing popularity of this approach, research investigating the behavior of collagen–vitamin C combinations in complex food matrices, particularly in frozen products, remains limited.
The main scientific objective of the proposed research is to determine the effects of the type and concentration of collagen hydrolysates (fish and bovine), the source of vitamin C (ascorbic acid and rosehip extract), and frozen storage duration on the quality of probiotic sheep's milk ice cream, vitamin C bioaccessibility, and the survival of selected probiotic strains (Lactobacillus acidophilus LA-5 and Bifidobacterium animalis subsp. lactis BB-12) under simulated gastrointestinal digestion conditions.
The expected results will provide a better understanding of the interactions between collagen hydrolysates, vitamin C, and probiotic bacteria in the complex matrix of a frozen dairy product. The innovative aspect of the proposed research lies in the simultaneous evaluation of the technological quality of the product, the stability of functional ingredients, and the survival of probiotic microorganisms in relation to the ingredients used and storage conditions.
