Therefore, the scope of this Special Issue “Improving the Quality of Raw Materials and Products of Animal Origin: From Farm to Processing Innovation” encompasses all factors that may affect the quality of raw materials of animal origin (meat, milk, and eggs) and, consequently, the quality of the end products. Submissions on the quality characteristics of animal products as valued by consumers are also welcome, as are articles on the use of additives or technologies in the processing of animal-origin raw materials that aim to improve quality, health benefits, and product shelf life.
