Abstract: Recent studies in the Laboratory of Analytical Biochemistry have confirmed the generation of hydrogen peroxide in tea and wine, and identified some new some new nutritional sources of hydrogen peroxide. The aim of the dissertation will be to provide a possibly complete list of dietary sources of hydrogen peroxide.  Another aims are: (i) to determine the metabolic effects of hydrogen peroxide using simulated milieus of digestive tract and (ii) elucidation of the role of hydrogen peroxide in the cellular effects of plant extracts and their active components.

Requirements for the candidate: M.Sc. in food science, chemistry or biology, strong motivation for experimental research.
